Baked banana pancake with blueberries

A soft and juicy blueberry pancake – quick to make and naturally iron-fortified with mini ferrum home iron powder. A much-appreciated picnic food!

Cooking time: About 20 minutes
Portions: 8-10 pieces

Ingredients

  • 1 banana
  • 2 eggs
  • 1 tbsp butter
  • 0.5 dl almond flour
  • 0.5 tsp baking powder
  • 2 scoops mini ferrum home iron powder
  • 1.5 dl frozen blueberries

Cooking

  1. Set the oven to 175 °C.
  2. Mix all ingredients except the blueberries until completely smooth.
  3. Line a baking sheet with baking paper and pour the batter into an even layer.
  4. Top with the frozen blueberries.
  5. Bake for about 15 minutes.
  6. Let cool before cutting into pieces.
